    Easy Curry Salad Dressing Recipe (Vinaigrette)

    This curry salad dressing recipe is super flavorful and simple to make.  You won't need a food processor or any other fancy equipment.  Just shake up a few ingredients in a mason jar, and it's ready to go!

    Unlike store-bought dressings, homemade versions allow you to skip unhealthy ingredients, such as added sugars, preservatives, and industrial seed oils.  This homemade dressing is made with olive oil, which contributes to a heart-healthy diet, providing essential fats and nutrients.

    What goes well with curry salad dressing?

    Curry salad dressing is delicious when drizzled on crispy oven-roasted sweet potatoes or crispy tender roasted Brussels sprouts.  It also goes well on dark leafy green salads paired with your favorite proteins, such as my curry chicken salad recipe. The next time you make one of your favorite salads, consider giving this curry salad dressing a try!

    This curry vinaigrette can also be used as a dip for sweet potato fries, especially if you are not a fan of creamy dips.  You could also toss it with some roasted baby potatoes to add a savory and mildly spicy flavor.  

    What is curry powder?

    While there are a variety of wonderful curry flavors used in cuisines around the world, the curry powder commonly found in your local grocery store draws inspiration from Indian cuisine.  At its core, most curry powders contain a mix of cumin, coriander, and turmeric.  

    Additional spices are often incorporated into the blend for a sophisticated flavor profile. For example, the one I typically use has a total of 11 different spices, including mustard, fenugreek, paprika, cayenne, cardamom, nutmeg, cinnamon, and cloves.

    What are the health benefits of curry powder?

    If you’re familiar with the phrase “food is medicine”, curry powder is a great example of how you can nourish the body while adding a sophisticated depth of flavor to your cooking.

    This spice blend not only imparts a comforting warmth but also offers many health benefits.  Here are just a few associated with the 3 core ingredients:

    1. Cumin can aid in preventing food-borne illnesses, improve blood cholesterol levels, combat inflammation, support digestion, and even assist in managing diabetes.
    2. Coriander can help lower blood sugar levels, boost the immune system, aid digestion, and fight infections. Additionally, it has the potential to contribute to heart and brain health.
    3. Turmeric's active compound, curcumin, is known for its potential to reduce inflammation, lower the risk of heart disease, boost brain health, and prevent some types of chronic disease.

    • Olive oil – choose a high-quality extra virgin olive oil packaged in a dark glass jar.  This will give you the best flavor and maximum nutritional value.
    • Curry powder – opt for a premium brand like Frontier Co-op or Mountain Rose Herbs for enhanced health benefits and robust flavor.
    • Fresh garlic – use fresh garlic for a bold, aromatic taste, or substitute with ¼ teaspoon of garlic powder if preferred.
    • Salt – regular table salt works great for this recipe.
    • Black pepper – use fresh cracked black pepper as it is more aromatic.
    • Red wine vinegar – this adds a little tang to the dressing.
    • Ginger paste – instead of using store-bought ginger paste, you can easily make your own.  Here’s how to freeze ginger for cooking.  Alternatively, you can use fresh minced ginger.
    • Juiced lemon – fresh-squeezed always tastes better than store-bought lemon juice.

    Instructions

    The quickest way to make this curry salad dressing recipe is to use a mason jar with a tight-fitting lid.  If you don't have a mason jar, then a small or medium mixing bowl will also work.  Just use a whisk to combine the ingredients.

    Substitutions

    If you don't have any olive oil on hand, avocado oil is a decent substitute.  

    Storage

    • Curry dressing can be stored in an airtight container in the refrigerator for up to a week.  
    • When ready to use, set it on the counter to bring it to room temperature.
    • Alternatively, you can gently heat it in the microwave for 30 seconds at 20% power to reach a pourable consistency.  
    • Mix or shake before using.

    INGREDIENTS

    • ½ cup olive oil
    • 3 tablespoon curry powder
    • 1 clove garlic, minced or ¼ teaspoon garlic powder
    • ¾ teaspoon salt
    • ¼ teaspoon fresh ground black pepper
    • 2 tablespoon red wine vinegar
    • 1 teaspoon ginger paste or fresh minced ginger (see notes)
    • 1 lemon, juiced about 3 tablespoons

    INSTRUCTIONS

    • Add all of the ingredients to a mixing bowl or mason jar.
    • Using a whisk, combine well. If using a mason jar, attach the lid and give it a good shake!

    NOTES

    Ginger paste is really easy to make and tastes much fresher than store-bought versions.  If you want to give this a try, here's a post on how to freeze ginger for cooking.
