Easy Curry Salad Dressing Recipe (Vinaigrette)

This curry salad dressing recipe is super flavorful and simple to make.  Just shake up a few ingredients in a mason jar, and it's ready to go!

INGREDIENTS

  • ½ cup olive oil
  • 3 tablespoon curry powder
  • 1 clove garlic, minced or ¼ teaspoon garlic powder
  • ¾ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • 2 tablespoon red wine vinegar
  • 1 teaspoon ginger paste or fresh minced ginger (see notes)
  • 1 lemon, juiced about 3 tablespoons

INSTRUCTIONS

  • Add all of the ingredients to a mixing bowl or mason jar.
  • Using a whisk, combine well. If using a mason jar, attach the lid and give it a good shake!

NOTES

Ginger paste is really easy to make and tastes much fresher than store-bought versions.  If you want to give this a try, here's a post on how to freeze ginger for cooking.
Storage:
  • Curry dressing can be stored in an airtight container in the refrigerator for up to a week.  
  • When ready to use, set it on the counter to bring it to room temperature.
  • Alternatively, you can gently heat it in the microwave for 30 seconds at 50% power to reach a pourable consistency.  
  • Mix or shake before using.
